I worked as Principal Photographer on the Daily Telegraph's Independent Schools Supplement for 12 years from 1995 until 2007 and still shoot regular Educational stories for the group. The technique is simple - whether shooting for the DT or a School's prospectus. Dont set pictures up. Stay around long enough for the students to forget that they are being photographed. Keep equipment to a minimum and light the pictures as little as possible for a natural feel. The kids will make the picture - you just have to be in the right place for it when it happens. Classrooms are the best place to shoot - once the lesson starts and the giggling has stopped the students become so engaged by what they're being taught that the photographer is forgotten.
